Chicken Casserole Recipes. The Perfect Potluck Meal.





Chicken Casserole Recipes. You might want to serve this chicken and penne dish to your family or take it to the potluck and be the hit of the party.

Make ready a tossed salad and a few hot rolls and let the party begin.

Ingredients

  • 8 ounces of penne pasta
  • 2 teaspoons olive oil
  • 6 boneless and skinless chicken breasts cut in small cubes
  • 8 ounces of sliced mushrooms
  • ½ teaspoon seasoning salt
  • 2 tablespoons margarine
  • 2 cloves of minced garlic
  • 2 tablespoons of flour
  • 1 cup of milk
  • 1 cup of chicken broth
  • 2 cups of Mozzarella cheese, shredded
  • 1 cup shredded cheddar cheese
  • 1 can of artichoke quarters, drained
  • Salt and pepper and paprika to taste

    Preparation

    Pre heat the oven to 350 degrees. Prepare the 2 to 2 ½ quart baking dish by greasing bottom and sides.In boiling salted water cook the penne pasta as directed. Drain and set aside.

    Heat the olive oil in a large skillet. Add mushrooms and chicken and seasoning salt. When the chicken has been cooked through and is nice and brown remove it and the mushrooms to a bowl and set aside.

    Melt the margarine in the skillet with the garlic continue stirring for about a minute. Blend in the flower until it is smooth and stir in the milk and broth. Stir until thickened. Add 1 ½ cups of the mozzarella cheese and half of the cheddar cooking until melted. Mix in the chicken, mushrooms and artichokes. Sprinkle salt and pepper to taste.

    Blend the sauce and pasta and transfer to the baking dish. Sprinkle in the remaining cheese paprika.

    Now bake for 25 to 30 minutes until nicely browned and bubbly.

  • 2 pounds of ground beef, lean
  • 1 large can, 46 ounce, tomato juice
  • 1 can of tomato sauce, 29 ounce
  • 1 can of kidney beans,15 ounce, drained and rinsed
  • 1 can of pinto beans, 15 ounce
  • 2 cups of chopped onion
  • ¼ cup of green bell pepper
  • 1/8 teaspoon of cayenne pepper
  • ½ teaspoon white sugar
  • ¼ teaspoon of oregano
  • ½ teaspoon black pepper, ground
  • ½ teaspoon of salt
  • 1 teaspoon of cumin, ground
  • ¼ cup of chili powder

    Preparation

    In a large deep skillet, place the ground bee and cover it. Using medium heat cook until nicely browned. Remove, drain, and crumble the meat until no large chunks remain.

    Using a large pot and the heat on high, begin by combining all of the ingredients together while stirring gently. Allow the heat to rise until it boils and then reduce the heat to low and cook for 1 ½ hours.

    To cook in a slow cooker you can do as above but use the cooker on low and cook for 8 to 9 hours.
