My Chicken and Dumplings Recipe

Chicken and dumplings is a delight to make and the whole group will love it. You can use homemade dumplings or noodles as you please.

Ingredients

1 five pound cut up roasting chicken
1 cut up celery stock
4 whole black peppercorns
1 teaspoon salt
¼ teaspoon seasoning salt to taste
4 small to medium peeled and sliced potatoes
1 large sliced onion

Dumplings or Noodles

1 cup all purpose flour
1 tablespoons of butter or margarine
1 teaspoon of salt
1 egg, beaten lightly
2 tablespoons of water
Chopped fresh parsley

Preparation

Wash and wipe dry the chicken pieces using a damp paper towel. Pour 6 cups of water in a Dutch oven and add the chicken. Add the salt, peppers and celery. Bring to a boil and reduce the heat allow to simmer with the cover on for 60 minutes. Remove the chicken from the broth and set aside. Keep the broth.

Debone the chicken and get rid of the bones and skin. Add the potato and onion to the broth and bring to a boil. Put the cover on and simmer until the potatoes are done. Remove the veggies from the broth. Set them aside.

Use a medium bowl to combine the flour, butter and salt to make the noodles. Make a depression in the center of the mixture and add an egg and two tablespoons of water and mix with a fork until well combined.

On a flat floured surface roll our the dough to about 1/8th of an inch thick. Using a sharp knife cut strips four inches long and an inch wide. With the broth boiling add the noodle strips and keep the broth boiling for about 15 minutes until tender.

Now add the chicken and veggies again and simmer for five minutes. Decorate with the chopped parsley.

Your guests will be so thrilled with this meal of chicken and dumplings.
