Banana Bread With Walnuts

Here is my favorite banana loaf. Whenever I bake it the whole family asks for more.

My husband and I love bananas but he likes them fresh without any blemishes and I like them no matter how over ripe they get. I had to come up with a solution because we always have left over, over ripe bananas and that draws fruit flies.

So here is my recipe.

Ingredients

8 tablespoons of butter or margarine at room temperature.
3/4 cup of white sugar
2 eggs
1 cup of all purpose flour
1 teaspoon of baking soda
1/4 teaspoon of salt
1 cup of whole wheat flour
3 large bananas
1 teaspoon vanilla
1/2 cup of shelled walnuts, coarsely chopped

Preparation

Pre-heat the oven
Grease a 9 X 5 X 3 bread pan.
Cream the butter and sugar till fluffy, add eggs one at a time beating well after each addition.
Sift the all purpose flour, baking soda and salt and stir in the whole wheat flour. Add to the creamed mixture and blend well.
Fold in the bananas, vanilla and walnuts.
Pour mixture into the baking pan. Bake for 50 to 60 minutes at 350 F until the cake tester comes out clean.
Cool in the pan for 10 minutes and then let it cool on a rack.
