Herb Roasted Chicken. Sweet and Tasty

Herb roasted chicken. This is a nice, simple recipe that anyone can cook in less than three hours. The herb butter roasted chicken will melt in your guests mouths. Cook it in the oven or microwave.Ingredients - 4 to 5 pound whole roasting chicken
- ¼ cup butter or margarine, softened
- 1 teaspoon rosemary leaves, crushed
- 1 teaspoon of salt
- ¼ teaspoon of pepper
- 2 tablespoons of chopped fresh parsley
- 1 teaspoon of minced fresh garlic
Cook in the oven directions Heat oven to 350 F. secure wings to the body of the chicken. In a small bowl stir together the remaining ingredients. Rub the chicken with the butter mixture. Place on rack in roasting pan. Bake for 2 to 2 ½ hours, or until fork tender. Cook in microwave directions Secure wings to the body of the chicken. In a small bowl stir together the remaining ingredients and ½ teaspoon paprika. Rub chicken with half of butter mixture. Place the chicken, breast side down, on microwave-safe roasting rack. Cover; microwave on high for 5 minutes. Reduce power to medium (50% power) turning rack ¼ turn after half the time, 30 minutes. Turn the chicken breast side up. Spread the chicken with the remaining butter mixture. Cover; microwave on medium (50%) power; turning rack ¼ turn after half the time, until fork tender (25 to 30 minutes). Tent with aluminum foil; let stand for 5 to 10 minutes.
